Ingredients
- 2 cups mashed sweet potatoes
- 1 cup cottage cheese
- 1/2 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped walnuts
- 1 tablespoon maple syrup (optional)
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a small baking dish.
- In a mixing bowl, combine mashed sweet potatoes and cottage cheese until smooth.
- Stir in rolled oats, cinnamon, vanilla extract, salt, and maple syrup (if using).
- Fold in half of the chopped walnuts.
- Spread mixture evenly into prepared baking dish.
- Sprinkle remaining walnuts on top.
- Bake for 30–35 minutes, or until center is set and top is lightly golden.
- Let cool for 5–10 minutes before serving.
Notes
- Use freshly baked or steamed sweet potatoes for the best flavor.
- For added sweetness, drizzle extra maple syrup before serving.
