Description

A warm and wholesome breakfast cobbler made with mashed sweet potatoes, cottage cheese, oats, and cinnamon, topped with crunchy walnuts for a balanced and comforting start to the day.


Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts
  • 1 tablespoon maple syrup (optional)
  • 1/4 teaspoon salt


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a small baking dish.
  2. In a mixing bowl, combine mashed sweet potatoes and cottage cheese until smooth.
  3. Stir in rolled oats, cinnamon, vanilla extract, salt, and maple syrup (if using).
  4. Fold in half of the chopped walnuts.
  5. Spread mixture evenly into prepared baking dish.
  6. Sprinkle remaining walnuts on top.
  7. Bake for 30–35 minutes, or until center is set and top is lightly golden.
  8. Let cool for 5–10 minutes before serving.
