Description
A quick and easy dessert quesadilla filled with cream cheese, raspberry jam, and chocolate chip cookies, cooked until crispy and golden.
Ingredients
- 4 oz cream cheese, softened
- 2 tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 4 (8-inch) flour tortillas
- 1/2 cup raspberry jam
- 5 chocolate chip cookies, coarsely chopped
- Butter or cooking spray
- 2 tablespoons cinnamon sugar
- Fresh raspberries (optional, for serving)
Instructions
- In a bowl, mix cream cheese, brown sugar, and cinnamon until smooth.
- Spread the mixture onto tortillas.
- Add raspberry jam and sprinkle chopped cookies on top.
- Fold tortillas or place another tortilla on top.
- Heat a skillet with butter or spray over medium heat.
- Cook quesadillas 2–3 minutes per side until golden and crispy.
- Remove and sprinkle with cinnamon sugar.
- Slice and serve warm with fresh raspberries if desired.
Notes
- Use moderate jam to avoid soggy tortillas.
- Cook on medium heat for even crisping.
- Try different jams or add chocolate chips for variation.
