A flavorful twist on a classic favorite! This Swiss Chard, Ricotta, and Curry Lasagna combines creamy ricotta, tender Swiss chard, and aromatic curry for a unique, comforting, and vegetarian-friendly dish perfect for family dinners or gatherings.
Ingredients
- 9 lasagna noodles (regular or no-boil)
- 1 large bunch of Swiss chard, stems removed and leaves chopped
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
- 1 cup milk or light cream
- 2 tsp curry powder (mild or medium)
- 1/4 tsp ground nutmeg
- Salt and black pepper, to taste
- Optional: lemon zest or chili flakes for extra flavor
Instructions
Prep the Swiss chard:
Heat olive oil in a large skillet. Add onion and garlic, sauté until fragrant. Add chopped Swiss chard and cook until wilted. Season lightly with salt and pepper. Set aside.Make the ricotta filling:
In a large bowl, combine ricotta, milk, curry powder, nutmeg, salt, pepper, and half the Parmesan. Stir until creamy and smooth.Cook the noodles:
If using traditional lasagna noodles, boil them until al dente. Drain and set aside.Assemble the lasagna:
Spread a thin layer of the ricotta mixture on the bottom of a greased baking dish.
Add a layer of noodles.
Spoon over some sautéed Swiss chard.
Add more ricotta mixture and a sprinkle of mozzarella.
Repeat layers until all ingredients are used, ending with mozzarella and Parmesan on top.
Bake:
Cover with foil and bake at 375°F (190°C) for 25–30 minutes. Remove foil and bake an additional 10–15 minutes until the top is golden and bubbling.- Rest & serve:
Let the lasagna cool for 10 minutes before slicing. Serve warm and enjoy!
Notes
- For a spicier flavor, add ½ teaspoon of red chili flakes to the ricotta mixture.
- To reduce moisture, make sure to sauté the Swiss chard well before layering.
- Want to make it vegan? Substitute dairy cheeses with plant-based alternatives and use coconut cream instead of milk.
- This lasagna can be assembled ahead and refrigerated overnight—just bake when ready.
