Description

This Taco Bell Mexican Pizza copycat recipe brings the fast-food favorite to your kitchen. Crispy tortillas, seasoned beef, beans, and melty cheese in under 30 minutes!

Ingredients

  • 8 flour tortillas (8-inch)
  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade mix)
  • 1 cup refried beans
  • 1 cup taco sauce or pizza sauce
  • 2 cups shredded cheese (cheddar + Monterey Jack blend)
  • 1 cup diced tomatoes
  • ½ cup green onions, sliced
  • ¼ cup black olives (optional)
  • 2 tbsp oil (for crisping tortillas)

Instructions

  1. Cook the Beef – In a skillet over medium heat, brown ground beef. Drain excess fat and stir in taco seasoning with a splash of water. Cook until well combined.
  2. Crisp the Tortillas – Lightly fry each tortilla in oil until golden and crisp, or bake at 375°F for 5–6 minutes per side.
  3. Assemble the Base – Spread refried beans on one tortilla, add a layer of seasoned beef, then top with another tortilla.
  4. Top & Bake – Spread taco sauce on the top tortilla, sprinkle generously with cheese, and add toppings like tomatoes, green onions, and olives.
  5. Bake – Place pizzas on a baking sheet and bake at 375°F for 8–10 minutes, or until cheese is melted and bubbly.
  6. Slice & Serve – Cut into wedges and enjoy warm!

Notes

  • Air Fryer Option: Assemble and air fry at 375°F for 6–8 minutes until the cheese melts.
  • Healthier Version: Use lean ground turkey, whole wheat tortillas, and reduced-fat cheese.
  • Vegetarian Option: Skip the beef and use extra beans or grilled veggies.
  • Extra Flavor: Add jalapeños, hot sauce, or a sprinkle of taco seasoning on top before baking.
  • Make Ahead: Assemble the pizzas ahead and refrigerate, then bake when ready to serve.
