Ingredients
- 1 lb ground beef
- 12 oz smoked sausage (sliced into rounds)
- 4 medium potatoes, diced
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn (drained) or 1 cup frozen corn
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 cup beef broth (or water as needed)
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and black pepper, to taste
- Optional: 1–2 jalapeños or green chilies for extra spice
Instructions
- In a large Dutch oven or stockpot, brown the ground beef over medium heat. Drain excess fat if necessary.
- Add the sliced smoked sausage and cook until lightly browned.
- Stir in onions and garlic. Cook until softened and fragrant.
- Add diced potatoes, beans, corn, and canned tomatoes (with juices). Stir to combine.
- Pour in beef broth until ingredients are covered.
- Season with chili powder, cumin, paprika, salt, and black pepper. Mix well.
- Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes, stirring occasionally, until potatoes are tender.
- Taste and adjust seasoning. If desired, simmer uncovered for a few extra minutes to thicken.
- Serve hot with cornbread, rice, or tortilla chips.
