Description

Hearty, smoky, and loaded with flavor, this Texas Cowboy Stew is the ultimate one-pot comfort food. Made with beef, sausage, beans, and potatoes—it’s budget-friendly and perfect for feeding a crowd.


Ingredients

  • 1 lb ground beef
  • 12 oz smoked sausage (sliced into rounds)
  • 4 medium potatoes, diced
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn (drained) or 1 cup frozen corn
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup beef broth (or water as needed)
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste
  • Optional: 1–2 jalapeños or green chilies for extra spice


Instructions

  1. In a large Dutch oven or stockpot, brown the ground beef over medium heat. Drain excess fat if necessary.
  2. Add the sliced smoked sausage and cook until lightly browned.
  3. Stir in onions and garlic. Cook until softened and fragrant.
  4. Add diced potatoes, beans, corn, and canned tomatoes (with juices). Stir to combine.
  5. Pour in beef broth until ingredients are covered.
  6. Season with chili powder, cumin, paprika, salt, and black pepper. Mix well.
  7. Bring to a boil, then reduce heat to low. Cover and simmer for 30–40 minutes, stirring occasionally, until potatoes are tender.
  8. Taste and adjust seasoning. If desired, simmer uncovered for a few extra minutes to thicken.
  9. Serve hot with cornbread, rice, or tortilla chips.
