Description

Juicy Texas Roadhouse smothered chicken with mushrooms, onions, and creamy sauce makes the ultimate comfort dinner. Perfect for cozy nights and easy weeknight meals.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 medium onion, thinly sliced
  • 1 cup mushrooms, sliced
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • 1 tbsp flour or 2 tsp cornstarch
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp fresh parsley, chopped (optional)
  • 2 slices Monterey Jack or cheddar cheese (optional)


Instructions

  1. Season chicken evenly with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken 5–6 minutes per side until golden and 165°F internally. Remove and set aside.
  3. In the same skillet, melt butter and sauté onions until softened. Add mushrooms and cook until tender.
  4. Stir in flour (or cornstarch slurry) and cook briefly.
  5. Add chicken broth gradually, stirring until thickened.
  6. Stir in heavy cream and simmer until smooth.
  7. Return chicken to skillet and simmer 5–7 minutes.
  8. Top with cheese if desired and melt before serving.

Notes

  • Pat chicken dry before seasoning for better browning.
  • Don’t overcrowd the pan to ensure proper searing.
  • Simmer gently after adding cream to prevent curdling.
  • If sauce thickens too much, thin with a splash of warm broth.
