A soft and moist gluten-free vanilla cake made in one bowl with simple ingredients, perfect for any occasion.
Ingredients
- 1 ⅓ cup almond flour
- 1/3 heaping cup potato starch (1/3 cup + 1 Tbsp)
- 1/4 cup brown rice flour
- 2/3 cup cane sugar
- 1 ½ tsp baking powder
- 1/2 tsp sea salt
- 2/3 cup dairy-free milk (or regular milk)
- 1 large egg
- 1 tsp vanilla extract
Optional for Decorating:
- Frosting (vanilla buttercream)
- Coconut whipped cream
- Fresh berries
Instructions
- Preheat oven to 350°F (175°C) and grease a cake pan.
- In one bowl, mix almond flour, potato starch, brown rice flour, sugar, baking powder, and salt.
- Add milk, egg, and vanilla extract.
- Stir until smooth and fully combined.
- Pour batter into prepared pan.
- Bake for 25–30 minutes until a toothpick comes out clean.
- Cool completely before frosting or serving.
Notes
- Do not overmix to keep the cake light and fluffy.
- Let cake cool fully before adding frosting.
- Add lemon zest or berries for flavor variation.
