Description

A crisp, refreshing Mediterranean-inspired salad made with fresh tomatoes, cucumbers, basil, and creamy mozzarella pearls, all tossed in a simple olive oil and balsamic dressing.


Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 large English cucumber, sliced and quartered
  • 1 cup fresh mozzarella pearls (bocconcini or ciliegine)
  • 1/4 cup fresh basil, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar (or lemon juice)
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Add the halved cherry tomatoes and sliced cucumber to a large bowl.
  2. Fold in the mozzarella pearls and chopped basil.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to coat.
  5. Taste and adjust seasoning as needed.
  6. Serve immediately or chill for 10–15 minutes before serving.

Notes

  • For extra freshness, add the basil just before serving.
  • If preparing ahead, store the dressing separately to keep vegetables crisp.
  • Swap balsamic vinegar for lemon juice for a lighter, citrusy flavor.
  • Add sliced red onion, olives, or avocado for more texture and variety.
