Description
A crisp, refreshing Mediterranean-inspired salad made with fresh tomatoes, cucumbers, basil, and creamy mozzarella pearls, all tossed in a simple olive oil and balsamic dressing.
Ingredients
- 2 cups cherry tomatoes, halved
- 1 large English cucumber, sliced and quartered
- 1 cup fresh mozzarella pearls (bocconcini or ciliegine)
- 1/4 cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (or lemon juice)
- 1/2 tsp dried oregano
- Salt and freshly ground black pepper, to taste
Instructions
- Add the halved cherry tomatoes and sliced cucumber to a large bowl.
- Fold in the mozzarella pearls and chopped basil.
- In a small bowl, whisk together olive oil, balsamic vinegar, dried oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to coat.
- Taste and adjust seasoning as needed.
- Serve immediately or chill for 10–15 minutes before serving.
Notes
- For extra freshness, add the basil just before serving.
- If preparing ahead, store the dressing separately to keep vegetables crisp.
- Swap balsamic vinegar for lemon juice for a lighter, citrusy flavor.
- Add sliced red onion, olives, or avocado for more texture and variety.
