Description

This flavorful tomato toast is layered with creamy blue cheese garlic butter and topped with juicy heirloom tomatoes and fresh herbs. Ready in 15 minutes—perfect for brunch, lunch, or entertaining!

Ingredients

  • 4 slices crusty bread (sourdough or rustic artisan)
  • 2 oz mild blue cheese, crumbled
  • 4 Tbsp unsalted butter, softened
  • 1 garlic clove, finely grated
  • 2 large heirloom tomatoes, sliced
  • Pinch of kosher salt
  • Freshly ground black pepper
  • Sea salt flakes (for finishing)
  • Fresh herbs (chives, parsley, or basil), finely chopped

Instructions

  1. Make Blue Cheese Butter
In a small bowl, mash the blue cheese and softened butter together with a fork until smooth. Mix in the grated garlic, a pinch of kosher salt, and freshly ground black pepper to taste.
  2. Toast the Bread
Toast or grill the bread slices until golden brown and crisp on the outside.
  3. Assemble the Toast
While still warm, spread each slice with a generous layer of blue cheese butter.
  4. Top with Tomatoes
Layer tomato slices over the buttered toast. Sprinkle with sea salt flakes and more pepper.
  5. Finish and Serve
Garnish with chopped fresh herbs and serve immediately while the toast is still crisp.

Notes

  • Use room temperature butter for easier mixing.
  • Choose a mild blue cheese for a more balanced flavor.
  • Toast bread just before serving to maintain crunch.
  • Add a drizzle of olive oil or balsamic glaze for extra flavor.
  • Can be served open-faced or cut into smaller portions for appetizers.
