Ingredients
- 4 slices crusty bread (sourdough or rustic artisan)
- 2 oz mild blue cheese, crumbled
- 4 Tbsp unsalted butter, softened
- 1 garlic clove, finely grated
- 2 large heirloom tomatoes, sliced
- Pinch of kosher salt
- Freshly ground black pepper
- Sea salt flakes (for finishing)
- Fresh herbs (chives, parsley, or basil), finely chopped
Instructions
- Make Blue Cheese Butter
In a small bowl, mash the blue cheese and softened butter together with a fork until smooth. Mix in the grated garlic, a pinch of kosher salt, and freshly ground black pepper to taste. - Toast the Bread
Toast or grill the bread slices until golden brown and crisp on the outside. - Assemble the Toast
While still warm, spread each slice with a generous layer of blue cheese butter. - Top with Tomatoes
