Ingredients
- 2 cups pecan halves (about 96 pieces)
- 11 oz bag soft caramel candies, unwrapped
- 2 Tbsp heavy cream
- 2 cups semi-sweet chocolate chips (or dark chocolate)
- 1 tsp coconut oil or shortening (optional, for smoother chocolate)
- Flaky sea salt (optional, for garnish)
Instructions

- Melt caramel – In a microwave-safe bowl, melt caramels with heavy cream in 30-second intervals, stirring until smooth.
- Add caramel – Spoon 1 teaspoon of caramel onto the center of each pecan cluster. Let cool slightly.
- Melt chocolate – Melt chocolate chips (with optional coconut oil) in the microwave or double boiler until smooth.
- Top with chocolate – Spoon chocolate over caramel, spreading slightly to cover.
- Optional garnish – Sprinkle with flaky sea salt or drizzle with melted white chocolate.
- Set & serve – Let candies set at room temperature, or refrigerate for 15 minutes before serving.
Notes
- Toast pecans lightly in the oven (350°F for 5–7 minutes) for enhanced flavor.
- Use good-quality chocolate for the best results.
- For extra flavor, add a splash of vanilla extract or bourbon to the caramel.
- Want variety? Try almonds, cashews, or walnuts instead of pecans.
- Store candies in layers with parchment between them to prevent sticking.
