Celebrate love with these easy-to-make Valentine’s Day Cookie Bars. Soft and chewy with colorful M&M’s and mini chocolate chips, they’re perfect for sharing with friends or family.
Ingredients
- 2 sticks of butter, at room temperature
- 1 cup granulated sugar
- 1 cup firmly packed golden brown sugar
- 3 large eggs, at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 3 cups all-purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1 1/2 cups Valentine’s M&M’s, plus more for topping
- 1 cup mini chocolate chips, plus more for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or grease it.
- Cream the butter, granulated sugar, and brown sugar in a large mixing bowl for about 2-3 minutes until fluffy.
- Beat in the eggs one at a time, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in 1 1/2 cups of Valentine’s M&M’s and 1 cup of mini chocolate chips. Reserve some for topping if desired.
- Spread the dough evenly in the prepared baking pan and bake for 25-30 minutes, until golden brown and a toothpick comes out with a few moist crumbs.
- Let the bars cool before cutting into squares or rectangles. Top with additional M&M’s and chocolate chips for extra color and sweetness.
Notes
- For a gooey texture, avoid overbaking. Keep an eye on the bars and remove them when the top is golden but the center is still slightly soft.
- Feel free to mix in other candy varieties or nuts for a different twist.
- For extra sweetness, drizzle melted white chocolate over the top after baking.
