Description

A refreshing summer salad made with watermelon, cucumber, feta cheese, and fresh herbs tossed in a honey-lime dressing.


Ingredients

Honey-Lime Dressing

  • 2 tbsp honey
  • 2 tbsp lime juice
  • 12 tbsp extra virgin olive oil
  • Pinch of salt

Salad

  • 1/2 watermelon, cubed
  • 1 English cucumber, cubed (about 2 cups)
  • 15 fresh mint leaves, chopped
  • 15 fresh basil leaves, chopped
  • 1/2 cup crumbled feta cheese


Instructions

  1. Whisk honey, lime juice, olive oil, and salt to make dressing.
  2. Add watermelon and cucumber to a large bowl.
  3. Mix in mint and basil.
  4. Sprinkle feta over salad.
  5. Drizzle dressing and gently toss.
  6. Serve immediately.

Notes

  • Chill watermelon before assembling for extra freshness.
