A cozy muffin recipe made with oats, whole wheat flour, and real apples — naturally sweetened and perfect for fall mornings.
Ingredients
Muffins:
- ½ cup butter, melted (1 stick)
- 1 cup plain yogurt
- 1 egg
- ½ cup brown sugar
- ½ cup maple syrup
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp kosher salt
- 1 cup old-fashioned oats
- 1 cup whole wheat flour
- 1 apple, finely diced
Optional Topping:
- ½ cup brown sugar
- 2 tbsp maple syrup
- ¼ cup old-fashioned oats
- ¼ cup whole wheat flour
- ½ tsp cinnamon
- 2 tbsp melted butter
Instructions
- Preheat oven to 350°F and line or grease a 12-cup muffin tin.
- In a large bowl, whisk melted butter, yogurt, egg, brown sugar, maple syrup, and vanilla.
- Stir in cinnamon, baking soda, baking powder, salt, oats, and flour. Fold in diced apple.
- If using topping, mix all topping ingredients in a small bowl.
- Fill muffin cups ¾ full and top with streusel (if using).
- Bake for 20–25 minutes or until a toothpick comes out clean. Cool on wire rack.
Notes
- Use a tart apple like Granny Smith or Honeycrisp for best flavor.
- Don’t overmix the batter — stir until just combined.
- Muffins freeze well for up to 3 months.
