Ingredients
Pasta Salad
- 8 oz. pasta of choice
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1 carrot, shredded
- ½ red onion, finely diced
- ½ cup black olives, sliced
- ⅓ cup parmesan cheese, grated
- 3 handfuls arugula
Zesty Italian Dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red or white wine vinegar
- 1 teaspoon maple syrup
- ½ teaspoon Dijon mustard
- 1-2 garlic cloves, minced
- ½ teaspoon Italian seasoning (optional)
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine halved cherry tomatoes, diced red bell pepper, shredded carrot, finely diced red onion, black olives, and parmesan cheese.
- For the dressing, whisk together olive oil, vinegar, maple syrup, Dijon mustard, garlic, Italian seasoning (optional), salt, and pepper.
- Add cooked pasta to the vegetables and pour the dressing over the salad. Toss to combine.
- Stir in arugula and refrigerate for at least 30 minutes before serving.
Notes
- Make the dressing ahead of time and store it in the fridge for up to 3 days.
- Add grilled chicken or chickpeas for extra protein.
