Description

This Zesty Italian Pasta Salad is packed with fresh vegetables, savory parmesan, and a tangy homemade dressing. It’s a delicious, easy-to-make dish that’s perfect for any occasion!


Ingredients

Pasta Salad

  • 8 oz. pasta of choice
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 carrot, shredded
  • ½ red onion, finely diced
  • ½ cup black olives, sliced
  • ⅓ cup parmesan cheese, grated
  • 3 handfuls arugula

Zesty Italian Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red or white wine vinegar
  • 1 teaspoon maple syrup
  • ½ teaspoon Dijon mustard
  • 1-2 garlic cloves, minced
  • ½ teaspoon Italian seasoning (optional)
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine halved cherry tomatoes, diced red bell pepper, shredded carrot, finely diced red onion, black olives, and parmesan cheese.
  3. For the dressing, whisk together olive oil, vinegar, maple syrup, Dijon mustard, garlic, Italian seasoning (optional), salt, and pepper.
  4. Add cooked pasta to the vegetables and pour the dressing over the salad. Toss to combine.
  5. Stir in arugula and refrigerate for at least 30 minutes before serving.

Notes

  • Make the dressing ahead of time and store it in the fridge for up to 3 days.
  • Add grilled chicken or chickpeas for extra protein.
  • For a spicier kick, add red pepper flakes or fresh jalapeños.
