Description

Crispy toasted tortillas filled with roast beef, provolone cheese, and fried onions, served with a savory homemade au jus for dipping.

Ingredients

  • 4 large flour tortillas (12-inch)
  • 8 slices provolone cheese
  • 12 ounces deli roast beef, thinly sliced
  • 1 cup French fried onions
  • 2 tablespoons extra virgin olive oil

  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. In a saucepan, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Simmer 5–7 minutes and keep warm.
  2. Lay out tortillas. Add 2 slices provolone, roast beef, and fried onions to each.
  3. Roll tightly, folding in sides slightly.
  4. Heat olive oil in skillet over medium heat.
  5. Cook roll ups seam-side down, turning until golden and crisp on all sides (about 6–8 minutes total).
  6. Slice and serve warm with au jus for dipping.
