Description

A creamy, cheesy casserole made with hash browns, pimento cheese, and sour cream for a rich and comforting side or main dish.


Ingredients

  • 20 ounces frozen shredded hash brown potatoes
  • 2 tablespoons butter, melted
  • 1.52 cups jalapeño pimento cheese
  • 8 ounces sour cream
  • ½ cup chicken broth
  • 34 green onions, chopped
  • ½ teaspoon salt
  • ½ teaspoon coarse black pepper
  • ½ cup grated sharp cheddar cheese (optional)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, mix hash browns, butter, pimento cheese, sour cream, broth, green onions, salt, and pepper.
  3. Spread mixture evenly into the baking dish.
  4. Sprinkle cheddar cheese on top if using.
  5. Bake for 45–55 minutes until golden and bubbly.
  6. Let cool slightly before serving.

Notes

  • Use freshly grated cheese for better melting.
