Description

Crispy, golden potatoes roasted with fresh rosemary and garlic, making the perfect side dish for any meal.


Ingredients

  • 1.5 kg potatoes, peeled and cut into chunks
  • 4 tbsp sunflower oil
  • 2 tsp sea salt
  • 4 sprigs fresh rosemary
  • 6 cloves garlic, unpeeled


Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cut the potatoes into chunks. Parboil for 7-10 minutes until just tender. Drain and let them dry.
  3. Toss the potatoes with sunflower oil, sea salt, and shake to roughen up the edges.
  4. Place potatoes on a roasting tray, adding rosemary and unpeeled garlic.
  5. Roast for 45-50 minutes, turning halfway, until golden and crispy.
  6. Discard rosemary sprigs and serve hot.

Notes

  • Add Parmesan cheese during the last 10 minutes for a crispy, cheesy topping.
  • Try adding a dash of paprika or chili flakes for a spicy kick.
